If you live in the right US region, you can buy ribeye sliced for cheese steaks that would work very well in this recipe. I can pick it up at every major grocery store in my town and use it for gyudon and bulgogi all the time.

I added mirin/rice wine instead because I don't normally keep sake around especially for cooking! I think it greatly changes the flavor that much! But you can always add a little if you want.

I noticed that the beef seasoning here doesn't have sake, which a gyudon recipe usually has. Would anything be missing by not adding sake to the beef?
