This banana bread looks divine. And I wonder if I'm allowed to add choco chips. Because, per usual, I am a child. We just accidentally ordered about 20 bananas from costco. So this seems like a great use case!
I just posted it on IG! Blend 480g (from about half a melon) honeydew with 480g (2 cups) cold water, 50g sweetened condensed milk (you can add more if your melon isn’t as ripe), and a pinch of salt. Strain the mixture through a mesh sieve. This makes enough “melon milk” for about 4 matchas.
In a chawan or flat bottom bowl (I’m using the mortar of my mortar and pestle) whisk 3g of matcha powder with 15g hot water to form a paste. Add 30g more of water and whisk until smooth and the surface has tiny bubbles/microfoam.
Fill a glass with a lot of ice and pour in about 7oz/198g of “melon milk” and top with your matcha. Swirl and enjoy!
You can give it a try! I normally have good luck with bobs red mill 1:1 GF flour but haven’t tested this with that so there’s a potentially it might not work!

If I wanted to make this gluten free would you suggest any tweaks or just use 1:1 gluten free all purpose flour replacement for the AP flour?
